Shrimp Wraps

Shrimp Wraps

Yield: 2 Portions

Ingredients Needed

  • ·         2 Each Garlic Wrap Skins
  • ·         8 Each Shrimp ( Cut Lengthways in halves )
  • ·         ¾ Tsp Chief Brand Fish Seasoning
  • ·         1 Tbsp of  Coconut Oil
  • ·         2 Tsp of  Coconut Oil
  • ·         ¼ Cup of Small Diced Tomatoes
  • ·         ¼ Cup of Thinly Sliced  Purple Onions
  • ·         ¼ Cup Small Diced Cucumbers
  • ·         1 Tsp of Finely Chopped Chadon Beni
  • ·         3 Large Leaves of Local Lettuce ( Shredded )
  • ·         1 Oz of Shredded Mozzarella Cheese
  • ·         ¼ Cup of Ranch Dressing

Method

Place your shrimp into a small bowl and add the Chief Brand Seasoning. Mix well. In a hot sauté pan over high heat, add your Simply Natural Coconut Oil and sauté shrimp, 1 minute on each side or until cooked.

Meanwhile, take your wrap skins and light warm them in the microwave for 10 seconds until pliable and soft.

Lay your skins down on a clean surface and brush them with the half the amount of  coconut oil. This helps make them stick when you roll it later.

In a small bowl, add the cucumbers, tomatoes, onions and chadon beni. Drizzle with the rest of the coconut oil and toss to dress.

In the centre of the skin, add a little lettuce, the salad mixture, few pieces of seared shrimp on top and a sprinkle of cheese.  Finally drizzle 1 Tbsp of ranch dressing. Gently fold the wrap by rolling and tucking in the both sides to secure it. You can use toothpicks to assist by sticking them into to hold it. Cut the wrap in halves and serve immediately.
