Gluten Free Chicken and Chick Pea Frittata

Frittatas are a must in Italy, Spain and many other European Countries. Here in the Caribbean Chef Jason plays with the use of curry spices, chick peas and chicken to make this Gluten Free Favourite.

Gluten Free Chicken and Chick Pea Frittata

Yield: 2 Persons

Ingredients Needed

  • ·         3 Eggs
  • ·         ¼ Cup of  Almond Milk
  • ·         2 Tbsp of Gluten Free Jinca Multi Grain Bread Mix
  • ·         2 Tbsp of Grated Rennet Free Cheddar Cheese
  • ·         2 Tbsp of Grated Mozzarella Cheese
  • ·         1 Tbsp of French Maid Margarine  
  • ·         2 Tbsp of Purple Onion Minced
  • ·         2 Tbsp of  Fine Diced Pimentos
  • ·         2 Tbsp of Chopped Celery
  • ·         2 Cloves minced garlic
  • ·         ¼  Cup of Chick Peas ( Canned )
  • ·         1 Tbsp of Red Bell Peppers
  • ·         1 Tbsp of Green Bell Peppers
  • ·         1 Tbsp of Yellow Bell Peppers
  • ·         ¼ Cup of Cooked Shredded Chicken ( Leftovers )
  • ·         ¼ Tsp of Chief Brand Curry Powder
  • ·         ¼ Tsp of Chief Brand Smoked Paprika
  • ·         ½ Tsp of Chief Brand Salt
  • ·         ½ Tsp of Chief Brand Black Pepper

Method

Crack the eggs into a medium mixing bowl, add the milk and whisk.

Sprinkle in the Jinca Multi Grain Mix and whisk to combine. Add cheese, mix and set aside.

In a medium non-stick sauté pan on high heat, add the coconut oil.

Sauté the minced onions, pimentos, celery and garlic for 30 seconds. Add the chickpeas, bell peppers and chicken and cook for 2 minutes on high heat. Season will all the Chief Brand Spices, and stir to combine.

On a low to medium heat, slowly pour in the Egg Mixture in to the pan. Swirl to ensure it covers the surface area of pan. Ensure sides do not stick by prodding with rubber spatula and cook gently on low heat for 6 covered.

Remove cover, flip frittata carefully on other side and cook for additional 2 minutes uncovered.

Remove frittata from hot pan; let cool and serve with fresh salad on top and a drizzle of chief brand Tamarind Sauce to accompany.
